Ferdinand ‘Budgie’ Montoya has announced a crowdfunding initiative, in collaboration with Seedrs, to move his Sarap restaurant from its current residency at London's 10 Heddon Street to a permanent site in Kingly Court.
The concept of Sarap first began as a supper club in 2017 as a way for Budgie to reconnect to his Filipino roots, and after years of supper clubs and pop-ups this new restaurant will be a culmination of everything he has achieved to date.
The plans for this new site will see Sarap become a hybrid of its casual origins and more refined present.
Chef Budgie, who cut his teeth in Michelin-starred restaurants, is determined to continue his mission of championing Filipino cuisine by combining traditional recipes and flavours with a modern flair to create a unique interpretation of the food and culture of the 7000+ Islands that make up the Philippines.
From 12 December, fans of Sarap and followers of Budgie’s journey will be able to invest in the business and contribute to the ambition of bringing Sarap to a permanent setting.
The new restaurant, located just off London’s famous Carnaby Street, will seat 45 diners in the main space with six bar stools for those looking for a more casual dining experience.
There will be an industrial colour scheme and simple interior design to reflect the restaurant's London edge and allow customers to soak up the smells of BBQ smoke, lemongrass and slowly roasting meats.
Visitors to Sarap’s Heddon Street restaurant will be pleased to find Budgie’s signature Lechon on the menu at Kingly Court, as well as a succinct selection of dishes that celebrate the sweet, salty, tangy and sour flavours of Filipino cuisine.
Budgie shared, “I’m really excited about this next phase of Sarap’s journey and to be able to keep building on what we’ve achieved so far.
