Michel Roux has been appointed to supervise the operations of a fresh restaurant and cocktail bar situated at the Crossbasket Castle hotel on the periphery of Glasgow.
Scheduled to open in August, the restaurant, named Trocodero, will showcase live music and entertainment every day of the week.
This marks the second Roux restaurant to be established at the hotel, which has maintained a partnership with the renowned culinary family since 2016.
Initially, the menus at the Crossbasket hotel restaurant were overseen by the late Albert Roux. Now, his son Michel has taken up this responsibility, while the hotel's executive head chef manages the restaurant's day-to-day operations.
Announcing the news in the Le Gavroche email 'Rouxletter', Michel said: 'Trocodero's is going to be the talk of Scotland! Fabulous, tasty food, great entertainment and somewhere people will want to keep coming back to.'
Crossbasket Castle, dating back to the 17th century, is a distinguished member of the Inverlochy Castle Management International (ICMI) collection. This esteemed group collaborates with the Roux family across various upscale hotels, including Inverlochy Castle located near Fort William.
Since 2011, Crossbasket has been under the ownership of Steve and Alison Timoney. Their acquisition came a year after the castle was added to Scotland's Buildings At Risk Register.
The couple invested £10 million in restoring the property before its relaunch in 2016. They are now undertaking a further £15 million expansion project, set to debut this summer, which will include the addition of 40 new bedrooms, a spa, eco lodges, and the new restaurant.
