Five head chefs curate 15th anniversary menu for Galvin at Windows


Galvin at Windows, the iconic fine-dining establishment that sits proudly 28 floors high on the London Hilton on Park Lane, is set to mark 15 years at the top this June.

The opportunity to showcase its pioneering culinary expertise whilst satisfying the nostalgic palate of post-pandemic diners; from 10 of June for a limited time, the restaurant will launch an exclusive five-course birthday menu, in partnership with iconic Champagne Maison, Perrier-Jouet.

Indulging in the luxuries of life we once took for granted, Galvin at Window’s Head Chef, Marc Hardiman will re-open doors to this exciting milestone to appreciate their most-loved dishes of days gone by, with his showstopper dish - hinting of more to come.

Curated by the five Head Chefs that have shaped the iconic kitchen over the years, this one-off birthday menu will transport diners back in time with each mouthful and will embody the respective Chef’s time at the restaurant.

The starter of Crab lasagne with beurre nantaise will be created by Chef Patron Jeff Galvin; the first course of Kimchi risotto by Joo Won (2013-2020); the second course of Confit Loch Duart salmon with broccoli, crème fraîche & caviar by André Garrett (2006-2013); with the show-stopping main of Dry-aged grass-fed beef fillet, short rib tartlet, yeast carrot & lovage by current head chef Marc Hardiman (2020 to present). Completing things accordingly with sweet temptations will be Chef Patron Chris Galvin with his famed signature dessert Apple Tarte Tatin.

Through constant experimentation and innovation present in both this exciting menu and across the à la carte, Marc is pioneering the next chapter for Galvin at Windows through his theatrical dishes that champion seasonal British produce. Going above and beyond to engage diners and re-spark the senses, his talent adds a contemporary twist balanced with the indulgence guests know and love.

The drinks offering continues the celebratory tone with the delicate and delicious cuvées of Perrier-Joue¨t, who’s long-standing connection to nature is brought to life by a flower wall in the entrance of the restaurant, welcoming summer.

The starter of Crab lasagne will be paired with a glass of Perrier-Jouët Blanc de Blancs - a vibrant, spontaneous champagne brimming with crisp citrus and fresh floral notes which is a timeless expression of Perrier-Jouët’s emblematic Chardonnay grape, perfect to commence the journey through the birthday menu. Perrier-Jouët joins hands with Galvin at Windows in embarking on a new chapter, having recently appointed Séverine Freson as the new Chef de Caves, the eighth to ever hold this position and the first female since its founding in 1811.

Head Sommelier Rudina Arapi, has selected an unforgettable pairing for each of the five dishes, highlighting the French and Asian flavours that have influenced the restaurant throughout the years. The unique and rich flavour combinations of Joo Won’s Kimchi Risotto have been expertly matched with a lively, spicy Gewürztraminer from Alsace, France 2017, leaving a well-balanced sweetness of tropical fruit flavours on the palate.

Head Chef Marc Hardiman’s succulent grass-fed beef fillet has been perfectly paired with a plummy, warm and soft 2016 Château Tayac from Margaux, France, with aromas of black fruits and notes of oak and vanilla. The birthday cocktail, created using Plymouth Gin, has been crafted to celebrate the upcoming Great British Summer.

I feel privileged to be able to work in this iconic restaurant and I look forward to carrying on the Galvin vision, working with both Chris and Jeff. I am excited to continue the evolution of Galvin at Windows, with my ambition to inspire guests with a next-level dining experience through the cutting edge of modern cuisine.”

The Birthday Menu will commence at a Launch Party on 10 June with arrivals and welcome between 6.30 and 7.30 pm, followed by dinner from 7.30pm to 10.30pm, where all five Head Chefs will be present to cook and elaborate on their dishes and journey at Galvin at Windows.

The menu will be more widely available to guests from 11 to 26 June, served during lunch and dinner service Wednesday to Saturday at £150 per person for five courses including matching wine arrangement, as well as £100, minus pairings. The Beef dish will also be available separately on the reopening à la carte menu, which will be available over summer.

For every guest dining on the Birthday Menu, £7.50 per person will be donated to the partner charity, Hospitality Action. A raffle will also be held during this period in support of Hospitality Action, the main prizes being an all-inclusive Birthday Dinner for six guests to dine at Galvin at Windows plus a dinner cooked and served by the Galvin at Windows Team at the lucky winner’s home.
