Brat pops up for special St David’s Day offering


To celebrate St David’s Day, Brat, the London award-winning restaurant from Tomos Parry, will open for a weekend long pop-up shop serving its celebrated woodfired baked cheesecake.

Inspired by the bars in the old quarter of San Sebastian and made using organic produce from Parry’s native Wales, including dairy from Calon Wen in Pembrokeshire, sheep’s curd from the Cosyn Cymru farm on the foothills of Snowdonia and flour milled at Felin Ganol in West Wales.

The Brat cheesecake (£45, serves 6), will be accompanied by jars of rhubarb roasted with blood orange, vanilla creme fraiche, Daffodils for the table alongside a bespoke Brat x St David’s day artwork.

The recommended pairing from the Brat sherry cellar is also available to order too. Maestro Sierra, Amoroso from Jerez, Spain NV.

Parry said, 'St David’s day is an important day in the Welsh calendar. Our inspiration for Brat is rooted in the Basque region of northern Spain where the original idea for the Brat burnt cheesecake came from. There is a deep Celtic connection between Wales and the Basque country and I am always reminded of this when we make our cheesecake in the restaurant.

'I am looking forward celebrating St David’s day this year by lighting our wood fires ovens with the team, baking cheesecakes and having a glass sherry! Lechyd da and Dydd Gwyl Dewi Hapus!'

The proceeds from the cheesecakes will go to The Wickers Charity based in Hackney, helping to support young people and families in East London. They can be pre-ordered for pick up or London delivery on the 27-28 February.
