Bubbledogs to launch Champagne bar concept at Fitzrovia site

Sandia Chang, founder and sommelier of bubbledogs, is revamping her Fitzrovia restaurant, reopening the doors on 30 April as a new Champagne bar, with a beautiful new design and an increased focus on approachable, hand-selected Grower Champagnes.

Chang and her team are working closely with London-based designers Astridge to create a refined and modern wine bar, with deep purple and mustard tones highlighted by copper accenting. The center of the room will feature a new marble high-top table, seating eight guests, complete with its own built-in champagne trough.

Marking a coming of age for bubbledogs, there will be an increased focus on Grower Champagnes, with Sandia further championing the small producers she has supported over the years including Dhodnt-Grellet, Jean-Marc Seleque, Lancelot Royer and Olivier Horiot.

Bubbledogs’ reopening will see an extended selection of cuvées from each grower join the list, as well as the introduction of more Coteaux Champenois bottles - still wines from the Champagne region.

For those who prefer to order their champagnes from the comfort of their own sofa, the online Bubble Shop, stocking a curated collection of the finest grower champagnes handpicked by Sandia, will also feature an extended list.

Chang said, “I’m looking forward to reopening bubbledogs and welcoming back guests for the next part of our journey, with Grower Champagnes as the main highlight. Of course, it wouldn’t be bubbledogs without a lot of fun, so we’ll be refining our hot dog menu and taking bubbledogs to the next level.”
