Former Royal Hospital Road sous chef to open Windsor gastropub in June


The former sous chef at Gordon Ramsay's three-Michelin-starred Royal Hospital Road restaurant, Steven Ellis is to open a 44-cover gastropub in Windsor this June, following an extensive refurbishment.

Purchased by Ellis last year, the 18th century Oxford Blue will offer French cuisine with a heavy English influence, and will specialise in British produce and game.

The private dining room upstairs, which can seat six to 10 guests, will offer a separate nose-to-tail style tasting menu. There will also be a 16-seat dining terrace and a 14-seat lounge bar.

The à la carte menu will serve up dishes like Stout glazed short rib with confit chips & bone marrow, and Lemon sole, mussels & samphire chowder.

Ellis is sourcing the highest quality ingredients from: Keltic Seafare in Dingwall, Scotland; Pugh’s Piglets near Preston, and Fish for Thought in Bodmin Cornwall. The game will be sourced from the nearby Crown Estate.

For beverages, Oxford Blue will serve tea from English tea producer, Tregothnan Estate in Truro, and local craft beers will be supplied by the Windsor and Eton Brewery.
