Bake-Off: The Professionals winner becomes Head of Pastry at London Hilton


Sam Leatherby, the former Bake-Off: The Professionals winner, has risen through the ranks and has been appointed Head Pastry Chef at the iconic London Hilton on Park Lane.

Sam has finessed his pastry talent at London Hilton on Park Lane and spent the last five years doing so, overseeing the sweets and desserts including the ever-popular seasonal afternoon tea menus.

Chef Sam is passionate about maintaining a high standard of service with every dish and achieving that 'wow' factor that guests expect from Hilton’s five-star luxury property.

Realising his passion for cooking at an early age, Sam joined the Hilton family straight from school with one of the enviable apprenticeship spots, which included a six-month placement at Heathrow Hilton.

Having demonstrated a high level of skill, Leatherby was offered a second placement at London Hilton on Park Lane, where he ascended from apprentice to Junior Sous Chef. Since then, he has received many prestigious awards, winning Bake Off – The Professionals in 2018 and coming 2nd at the Senior Sugar Championships in 2017.

Always keen to express his creativity, Chef Leatherby enjoys creating showpieces and unique desserts. Beginning his process with flavours that suit the season, Leatherby carefully crafts his desserts, ensuring that they can be produced on a large scale.

Teamwork is one of his secrets to success, and Sam particularly references the support he’s had from Executive Chef, Chef Anthony Marshall.

Sam commented, “It has taken a lot of hard work and dedication over the last 11 years, and I couldn’t have done it without the help from so many - giving me the fantastic opportunity to work and learn alongside some of the best in the industry helping me become the chef I am today!”
