Brat & Peg join at Climpson’s Arch for special menu


On Monday 6 December, Brat at Climpson’s Arch (Brat's residency since April) will be teaming up with Peg, the latest opening from the team behind P Franco and Bright.

Bringing together two of Hackney’s favourite neighbourhood restaurants, the evening will pair together Brat and Peg’s wood-fired cooking techniques to create a unique menu.

To start, the team will serve up plates of Peg’s skewers, including venison, wild boar, mallard, quail with bay leaf, and Brat’s woodfired leeks and frito of fish.

A variety of dipping sauces have been specially created to pair with each meat, such as preserved damson relish and apple, kosho and English mustard. To follow, a wheel of Ogleshield, a creamy, savoury cheese, known as the West Country’s answer to raclette, will be melted and scraped onto dishes.

Taking inspiration from a Welsh hot pot, Cawl, and the Japanese Nabe, wild mushroom and mutton hot pots will be the main event, placed in the centre of each table on charcoal heated grills. The simmering, rich broth will be served alongside a selection of sliced cuts of mutton, cep mushrooms, and vibrant vegetables from Namayasai farm in Sussex, all for dipping, as well as laverbread green sauce, walnut miso, lemon kosho, and white kimchi.

To finish, poached pears with roasted chestnuts and cream give a delicate and refreshing end to the meal.

The Peg wine team will be working alongside Brat's Martina and Nancy to create a wine offering paired with the dishes.

Setting the scene for the evening, neighbours of Brat at Climpson’s Arch, BBE Records, will be playing records from 6pm throughout the night. Famed for being a source of soulful music for the past 25 years, the team will be turning out hidden gems and all-time classics and jazz, to hip-hop and rare groove.
