Simon Conboy becomes Head Chef at 108 Brasserie


Family-owned Irish luxury hotel group, The Doyle Collection has appointed Simon Conboy as Head Chef at The Marylebone Hotel in London W1, overseeing its signature restaurant, 108 Brasserie.

Formerly of The Ivy, Dubai and Grosvenor House Hotel, Conboy will bring a wealth of experience and creativity to this central London haunt loved by locals and visitors alike.

Conboy said, “I am delighted to be joining The Doyle Collection as Executive Head Chef of The Marylebone. The main restaurant, 108 Brasserie, is such a popular local destination in Marylebone Village and I look forward to getting to know the patrons and creating some really innovative and exciting dining experiences.

'Our menu will draw on global influences, using the season’s best produce and dedicatedly working closely with London’s top suppliers. We currently have fantastic al fresco dining on Marylebone Lane for now but I can’t wait to open the full restaurant space on 17th May!”

Born and bred within the hospitality industry, Conboy developed his passion for cooking while helping out and cleaning dishes in the kitchen of his grandparent’s gastropub in Sheffield. He later moved to London to launch his culinary career and progressed the role of Head Chef at Lanes Bar and Restaurant, The Forge and Le Deuxième.

One of the highlights of Conboy’s career was moving to Dubai in 2010, where he oversaw two significant openings in the space of only one year: The Ivy Dubai and Rivington Bar and Grill.

Prior to his new appointment, Conboy was the Head Chef at JW Marriot Grosvenor House Hotel, where he was responsible for all the dining experiences across the hotel from the restaurant and bar to room service and afternoon tea.

Conboy then moved onto large scale events, where he catered for some of the UK’s high-profile annual events, including the BAFTAs and The Pride of Britain Awards.

Alongside heading up 108 Brasserie and The Marylebone’s varied food offerings, Conboy will continue to share his culinary tips and favourite British and Middle Eastern influenced recipes.

He has consistently made TV appearances over the years both in the UK and Middle East, including being a semi-finalist in the first series of Master Chef – The Professionals.
