London restaurant Coya Mayfair brings a unique Peruvian inspired BBQ finish-at-home feast to the April Cocinando con Coya weekend delivery menu.
Available for first delivery from Saturday 10 April, it’s arrival is perfect timing as we move towards hosting guests in our own gardens again. Complete with instructions to finish on the BBQ or in the kitchen, guests can enjoy the feast no matter what the weather is this Spring.
The elaborate feast will begin with Crocantes con Guacamole - corn tortillas, shrimp crackers and guacamole; Tacos de Res - beef brisket, chipotle, corn tortilla, tomato & red onion salsa; Anticuchos de Setas - forest mushroom, aji panca, parsley and Anticucho de Gambas - tiger prawns, aji panca and chives.
There will be a choice of two mains, including Escabeche Peruano - seabream, onion escabeche, tomatoes, ají amarillo; Lomo de Res - Spicy beef fillet, crispy shallots, ají limo, star anise; Costellas de Cerdo - presa Iberica with tamarind glaze and cashew nuts; and Pollo Asado - corn fed baby chicken with aji panca and coriander.
Guests will also have the option to upgrade their BBQ with Bife Angosto de Wagyu - Chilean Wagyu sirloin, adobo and chimichurri sauce, and Langosta a la Parrilla - native lobster 600/800gr with green & red chilli salsa and lime - not forgetting the all important sides of tenderstem broccoli & Peruvian style coleslaw.
Guests also have the option to add some refreshing sparkle to the occasion by adding Coya’s ready-to-pour Mi Hugo cocktail. Made with Prosecco, gin, elderflower liqueur and mint cordial, the Mi Hugo comes pre-mixed, along with a bottle of Prosecco, ready to be finished at the table. Those that prefer to enjoy a beer with their BBQ can add six Alhambra (330ml).
